Just Thai

we still had the cravings for thai spicy food. so tonight, we had :-

thai basil clams - this was quite a simple dish to prepare. Ingredients are garlic, star anise, basil, lime leave, fish sauce (we got a small bottle from bkk, but you can also get it from supermarkets here), dark sauce, sugar and chilli padi. prepare the sauce first with all the ingredient leaving some chilli and basil to add in later. then when the sauce thickens, add in the clams. stir it and cover the pan/wok to let the clams cook. when you see them open up, add in the remaining chilli and basil. there you have your thai basil clams. the sauce is great to go with rice!!


for the portion of chilli sauce here, you'll need to blend 5 chilli padis, 3 cloves of garlic, 2 tahitian limes and sugar. then add fish sauce to taste. you'll get a sour and really appetizing spicy chilli sauce. this goes really well with grill food.


this is simple - all you need is salt, black pepper and some olive oil to marinate the squid. then on a grill pan, grill the squid till brown.


we had a great dinner and the chilli was really burning our tongue!!
